    Chinese Chicken Salad


Chinese Chicken Salad

I used my new tortilla pans to shape the bowls

2 romaine hearts chopped
A handful of organic baby spinach
Chop grilled chicken breasts or chicken tenders breaded (I used both)
1 cup Chinese crunchy noodles
About 20 snow peas cut in half
½ cup peanuts chopped
Sesame seeds (I like the black ones)


Thai Peanut Sauce Dressing:

Ingredients:

¼ cup peanut butter
¼ cup of water
2 tbsp soy sauce
2 tbsp lime juice
2 cloves garlic minced
2 tbsp rice wine vinegar

      Combine all ingredients in a saucepan over low heat. Continue stirring over low heat until ingredients are combined and mixture is smooth and creamy.
             Toss in a bowl and combine dressing before putting in tortilla bowls for a better
             coating of the dressing.
I hope you like this. My husband and I LOVED it! Next time I am going to try mandarin oranges in the salad
